Banana Date Cookies

Sometimes, you just need a cookie. And sometimes, you don’t want all the added sugar and white flour that’s in those cookies, but you just gotta have something sweet. Like during this crazy postpartum period, I need lots of things that I can eat with one hand, and feel good about eating, but also I’m craving fruits and sweet things like bananas. Enter these banana date cookies.

They’re made with wholesome ingredients, lots of fiber, healthy fats and some protein, and you can feel great about eating them! Plus, they won’t slow or weigh you down.

What You’ll Need:

  • 3 ripe bananas

  • 6-10 dates

  • 1 cup walnuts

  • 1 cup almond flour

  • 1 1/2 cup gf oats

  • 1 cup shredded coconut

  • 1/4 cup coconut oil

  • 1/4 tsp salt

  • 1 tsp cinnamon 

  • 1 tsp vanilla 

  • 2 TBSP flax seeds

What I Did:

  1. Mix dates in a food processor until chopped. (f you don’t have a food processor, you can chop by hand, use pre-chopped dates or sub raisins or anything else you like!)

  2. Add walnuts and pulse.

  3. Add bananas and pulse until combined.

  4. Mix in remaining ingredients.

  5. Bake for 20 minutes at 350.
